Salmon topped with Herbed Breadcrumbs
4 Darnes of Salmon
6 tbs. Breadcrumbs
2 tbs. chopped herbs of your choice they must be fresh
2 finely chopped rashers of smoked bacon
2 tbs. Olive oil
Salt and pepper
Put the salmon on to a lightly greased tray (or onto a piece of
Bake-o-Glide). In a bowl combine the rest of the ingredients and
spoon on top of the salmon pressing it on. Cook on the bottom of the
Roasting oven floor for 5 mins then move to the top of the oven for
another 5-8 mins. Serve with new potatoes and green beans tossed in
a lemon and olive oil dressing.
For conventional cookers, pre heat oven to 200c. Place salmon into the
oven and cook for 10-12 minutes. When it is done, finish the salmon under
a very hot grill to crisp up the topping.
