Potato, Bacon and Pinenut Salad

The quantities for this salad are up to you, follow your taste buds!

1 pack pancetta
500g new potatoes
2 tablespoons creme fraiche
1 tablespoon butter
1 tablespoon toasted pinenuts
Salad leaves, I like to use Cos lettuce
salt and pepper
a good mustard based French dressing, either make your own or buy

Boil the new potatoes until tender, drain and mix in the creme fraiche, butter, salt and pepper.  Set aside.  Fry the bacon until  crispy toss in the pinenuts and then the dressing.  Once it is bubbling turn off the heat and scrape up all the crispy bits and put to one side, do not let it burn.  Arrange the lettuce on a large platter, put the potatoes onto the leaves and then pour over the bacon mixture.  If you want, scatter over some flat leafed parsley and serve while still warm.

This serves about 4
